INGREDIENTS:<\/span><\/h2>\n

1\/2 cup sugar<\/p>\n

3 tablespoons cornstarch<\/p>\n

2 cups skim milk<\/p>\n

3 eggs, separated<\/p>\n

2 tablespoons butter<\/p>\n

1 teaspoon vanilla<\/p>\n

1 cup sweetened flaked coconut, plus 1\/3 cup for the top<\/p>\n

1\/4 teaspoon vanilla<\/p>\n

1\/4 teaspoon cream of tartar<\/p>\n

pie shell, baked<\/p>\n

DIRECTIONS:<\/span><\/h2>\n

Heat oven to 350 degrees.\u00c2 Combine sugar and cornstarch in a medium sized saucepan.
\nPour in milk and whisk constantly over medium high heat until mixture is thickened and bubbly, about 8 to 10 minutes.<\/p>\n

Separate eggs.\u00c2 Place\u00c2 yolks in a small bowl and whites in a large metal mixing bowl.\u00c2 Set whites aside.\u00c2 Beat yolks slightly with a fork.\u00c2 Pour in a tablespoon of hot mixture into yolks.\u00c2 Return to hot mixture.\u00c2 Cook and stir over medium high heat for 2 minutes longer.<\/p>\n

Remove from heat.\u00c2 Stir in butter and the teaspoon of vanilla.\u00c2 Mix well.\u00c2 Stir in the one cup of coconut.<\/p>\n

Pour into cooled pie shell.<\/p>\n

For the meringue:<\/strong><\/p>\n

Beat the 3 egg whites with the 1\/4 teaspoon of vanilla and the cream of tartar until stiff peaks form, about 4 to 5 minutes.<\/p>\n

Spread over pie, being sure to seal edges with meringue.\u00c2 Sprinkle the 1\/3 cup of flaked coconut over.<\/p>\n

Bake at 350 degrees for 15 to 18 minutes or\u00c2 until meringue is nicely browned.<\/p>\n

Cool, refrigerate and serve.<\/p>\n
