As you all know, chicken is my favorite of all! That\u2019s why I have the best recipes out there! Yesterday, I made this chicken lombardy casserole, and my God is was good! Check it out.<\/p>\n

Marsala wine and mozzarella cheese got together and decided to skip the traditional chicken marsala on the menu, instead upping the ante with a buttery pan seared chicken & mushroom dish called Chicken Lombardy. It sounds fancy, but you\u2019ll soon discover it\u2019s shockingly simple. It\u2019s the best use of both wine & cheese in a single recipe!<\/p>\n

I can honestly say this chicken lombardy isn\u2019t a native dish, or even a family heirloom. Surprising, right? Since it\u2019s Italian sounding?<\/p>\n

This is one of those much loved recipes that nobody is quite sure where it originated. We all seemed to find the ingredients & the instructions on Facebook though. Nothing wrong with that since there doesn\u2019t seem to be an original source to give credit where credit is due. Disappointing though for the very same reason.<\/p>\n

You\u2019ll Need:<\/strong><\/span><\/h2>\n

8 oz package of sliced fresh mushrooms.
\n2 tbsps of melted butter.
\n6 skinned and boned chicken breasts.
\n\u00bd cup of all purpose flour.
\n\u2153 cup of butter.
\n\u00bd cup of chicken broth.
\n\u00bd tsp of salt.
\n\u215b tsp of pepper.
\n\u00bd cup of shredded mozzarella cheese.
\n\u00bd cup of parmesan cheese.
\n2 chopped green onions.<\/p>\n

How to:<\/strong><\/span><\/h2>\n

In a large nonstick skillet, melt 2 tbsps of butter over medium high heat and saut\u00e9 the mushrooms for 3 to 5 minutes, stirring constantly.
\nCut each chicken breast in half lengthwise and place them between 2 sheets of heavy-duty plastic wrap and flatten to \u215b inch thickness.
\nCoat the chicken in the flour and cook for 3 to 4 minutes per side in 1 or 2 tbsps of butter over medium heat in a nonstick large skillet. Remove the chicken from the skillet and leave the drippings in the skillet.
\nSprinkle the mushrooms over the chicken.
\nIn the same skillet, add the broth and boil. Reduce the heat and simmer for 10 minutes stirring occasionally. Season with salt and pepper and pour the sauce over the chicken.
\nIn a bowl, mix together the cheeses and onions and sprinkle over the chicken.
\nIn a preheated oven to 450\u00b0, bake the chicken for 12 to 14 minutes.<\/p>\n","protected":false},"excerpt":{"rendered":"
