chilli and lime dressing
In a saucepan of boiling water, cook the snow peas for two mins or until bright green and tender crisp. Refresh under cold water and drain well. Cut the snow peas in half diagonally using a sharp knife.
To make the lime and chilli dressing, combine the lime juice, oil, vinegar, chilli, garlic and sugar in a screw-top jar and stir until well combined. Season.
- Toss the watercress, peach, prawns, mint leaves and snow peas in a bowl. set and Arrange on a serving platter. Fritter over goat’s cheese. Drizzle with dressing.
