3/4 cup sugar
1/4 cup packed brown sugar
1/2 cup softened butter
1 large egg
1/2 tsp. vanilla extract
1/2 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
1 cup all-purpose flour
1 ½ cups quick-cooking oats (Not instant)
3/4 cup dried cranberries
1/2 cup chopped walnuts
6 oz. white chocolate chips
Preheat oven to 375 degrees Fahrenheit
In a large bowl, use an electric mixer to combine the sugar, brown sugar, and butter. Mix well until creamed.
Add the egg and vanilla – mix well.
Add the cinnamon, baking soda, salt, and flour – mix well.
Fold in the oatmeal, dried cranberries, walnuts, and white chocolate chips until well distributed throughout the dough.
Roll into 1-inch balls and place 3 inches apart on a greased cookie sheet.
Bake in preheated oven for 10-12 minutes – until edges are light golden brown.
Remove from oven and let cool on cookie sheet for 2-3 minutes. Then, transfer to a cooling rack.
